WebMonk unarmed is viable even as solo job. Its weakness is easily covered by equipping poles for flying enemies. As for a job combo anything would work really (though I would prefer a heavy armor class to boost str early on like time mage + utility magic, other heavy armor class would be useless since I assume you want to run fully unarmed).
